Here’s a recipe for chawan mushi (“Egg custard soup” - which makes it sound worse than it is) using ginko nuts.
Another good way to eat them is simply throw some in the rice cooker when you cook the rice (great with brown rice).

The recipe sounds good, but that smell! I don’t know if I could eat ones I gathered myself. I’ll ask for it next time I go to a Japanese restaurant; maybe that’s a better way to start.

The older they are, the smellier they get, so you want to get them as early as possible in the stink cycle. But there’s no doubting that they smell. My wife tells me her favourite way to eat them is to skewer them and simply grill them over a fire. I imagine carting a little hibachi out to the countryside, collecting them fresh, and eating them al fresco might improve the taste somewhat! Apparently you can buy canned ones (I’ve never had them), so that might be a good place to start, too. -jh
