Yet Another Leaf

Something out of left field for today’s leaf (technically yesterday’s leaf, but it’s been a long day): wasabi.
When we went to Okutama last weekend we found some cheap, fresh wasabi in a store run by a 205-year-old woman near the station (well she looked 205). The next night we ate tuna sashimi with wasabi mayonnaise that I prepared. It is, as they say in California, to die for. Here’s how you do it:
Put some mayonnaise into a small bowl. Add the wasabi. Stir in some mirin. When it tastes right, pour it on (don’t forget the shoyu on top).
It would undoubtedly be better with homemade mayonnaise (the simple approach, the more complicated approach).
The Tokyo Food Page has a recipe for crab meat with wasabi mayonnaise although I think omitting the mirin from the mix is inviting unnecessary disappointment.
